Cold chicken salad-great for potluck or summer meal!

With summer upon us, I’m always thinking of summer recipes to cook that is easy and doesn’t require me to cook in front of a stove. Thus, this cold chicken salad is something I love eating during the summer time. It’s great on its own or topped onto some cold noodles.
I love having cold dishes in the summer time because when the weather is hot, I don’t have an appetite and having hot food isn’t always appealing. On those days, I love making something quick and easy. This recipe was also made easier by using store bought rotisserie chicken. This dish is light and refreshing and you don’t have to eat it just in the summer time, it’s great all year round!
Ingredients
For this recipe I used store bought rotisserie chicken, about 2-2.5lbs.
For the veggies: I used red onions, cilantro, minced garlic, and scallion. You can also add some shredded lettuce, carrots and cucumbers.

The sauce is made from soy sauce, oyster sauce, sugar, salt, sesame oil and onion infused oil. If you don’t have infused oil, just skip it.


How to make cold chicken salad
First refrigerate the rotisserie chicken for about 30 minutes if freshly bought.
Then separate the meat from the bone and shred the chicken with your hands. Place into a bowl.
Cut all the veggies needed and place into the same bowl. Combine infused oil, soy sauce, oyster sauce, sugar, salt and sesame oil together.
Pour the sauce over the chicken and your veggies. Mix.



Eat it as it is or serve over cold noodles or rice!
Pro-tip:
- Make sure to cool the chicken down before de-boning and shredding the chicken.
- If you like the salad to be more cool, make the chicken salad ahead of time and put into fridge before serving.
- If you want more vegetables, add in a lettuce or use lettuce to make a lettuce wrap.

Cold chicken salad
Ingredients
- 1 rotisserie chicken shredded (2-2.5lb)
Veggies
- ยฝ cup cilantro
- 1 medium size red onion sliced
- 2 tbsp scallions cut into chunk
- 2 tbsp minced garlic
Optional vegetables
- ยฝ cup shredded lettuce
- ยฝ cup shredded carrots
- ยฝ cup shredded cucumbers
Sauce
- โ cup soy sauce
- 2ยฝ tbsp onion infused oil (skip it if you don't have it)
- 1 tbsp oyster sauce
- 1ยฝ tsp sesame oil
- 2 tsp sugar
- 1ยฝ tsp salt
Instructions
Prepping the chicken
- Refrigerate the rotisserie chicken for 20-30 minutes if freshly bought.
- Shred the rotisserie chicken with knife and fork or with your hands and put into a bowl
Prepping the veggies
- Cut up some scallions, onions into slices. Roughly chop the cilantro. Mince some garlic. Put everything into the bowl with the chicken.
Adding the sauce
- Add in soy sauce, onion infused oil, oyster sauce, sesame oil, sugar and salt into the bowl.
- Mix together, sprinkle some white sesame seeds and enjoy!
