Cold chicken salad

Ingredients

  • 1 rotisserie chicken shredded (2-2.5lb)

Veggies

  • ½ cup cilantro
  • 1 medium size red onion sliced
  • 2 tbsp scallions cut into chunk
  • 2 tbsp minced garlic

Optional vegetables

  • ½ cup shredded lettuce
  • ½ cup shredded carrots
  • ½ cup shredded cucumbers

Sauce

  • cup soy sauce
  • tbsp onion infused oil (skip it if you don't have it)
  • 1 tbsp oyster sauce
  • tsp sesame oil
  • 2 tsp sugar
  • tsp salt

Instructions

Prepping the chicken

  • Refrigerate the rotisserie chicken for 20-30 minutes if freshly bought.
  • Shred the rotisserie chicken with knife and fork or with your hands and put into a bowl

Prepping the veggies

  • Cut up some scallions, onions into slices. Roughly chop the cilantro. Mince some garlic. Put everything into the bowl with the chicken.

Adding the sauce

  • Add in soy sauce, onion infused oil, oyster sauce, sesame oil, sugar and salt into the bowl.
  • Mix together, sprinkle some white sesame seeds and enjoy!

Notes

If you don't have any infused oil, you can skip it.
