If there is anything that says holidays, itโ€™s cranberries. I love eating cranberry sauce with turkey but Iโ€™ve always wondered if I could use cranberries to make more dessert. Iโ€™ve made cranberry pie before but I want to do something slightly different.ย I love making tiramisu and I thought what happens if I made cranberry tiramisu? I decided to try it out and it was pretty delicious! I used both homemade cranberry sauce and pre-made cranberry sauce, both are delicious.

Tiramisu is a very versatile dessert and you can make into any flavour of your choice. Iโ€™ve made mango tiramisu before and itโ€™s so good. The only thing you might have to do is dip the lady fingers into milk instead of coffee.

Some main ingredients:

  • Lady fingers: if you are short on time, buy from grocery store. Most packages comes with about 24 lady fingers or you can buy a bigger pack if you are making a large one. If you want to challenge yourself, you can make from scratch. I love Preppy Kitchen recipe
  • Mascarpone cheese: this is the key component of tiramisu. If you have time or can’t find it yourself, you can actually make this yourself. Check out two of these recipes for homemade mascarponse. Psst: it’s just heavy cream and fresh lemon juice.
  • Cranberry sauce: you can either buy it or make it yourself. If you are buying premade cranberry sauce, get the whole berry not the jellied ones.

I also didn’t add any egg yolks which is traditionally in tiramisu. The eggs I get are not pasteurized and I’m not a huge fan of putting eggs into mascarpone mixture. If you want to add egg yolks, you can whip them while placing in a hot water bath of at least 57oC or 134oF. I also replaced coffee and coffee liqueur with milk because I don’t want coffee to overpower the cranberry sauce.

Ingredients

  • 23-24 lady fingers
  • 1 1/2 mascarpone cheese (350g)
  • 1/4 cup sugar
  • 1 1/2 can of cranberry sauce or 5-6 cups of cranberry sauce.
  • 1 1/2 cup heavy/whipping cream (375ml)
  • 3/4 cup of milk
  • Orange slices to decorate (optional)

Fits in 8 x8 inch dish or 16 x 4 inch long dish

Homemade Cranberry (purely optional)

  • 340 g fresh or frozen cranberry (12 oz)
  • 1 cup granulated sugar
  • 1 fresh orange juice

How to make Cranberry Tiramisu

Homemade cranberry sauce (optional)

  1. Put in washed cranberry with sugar and juice of one orange into a pot
  2. Turn the heat to medium and let it cook slowly
  3. After 30 minutes, the cranberry should be soft and the juices should be reduced.
  4. Transfer into a container and let it cool to room temperature and then into the fridge for at least 4 hours or best overnight

Cranberry tiramisu

  1. In a bowl whip the heavy/whipping cream on high speed until stiff peaks (5-7 minutes)
  2. In a separate bowl, whip mascarpone and sugar together until smooth.
  3. Add in the whipping cream and whip together until combined (donโ€™t overmix). Set aside
  4. Dip your lady fingers into milk and place into your dish
  5. Add cranberry sauce onto the lady fingers and use a brush to spread it evenly.
  6. Add in your mascarpone mixture on top, spread it evenly and make sure itโ€™s flat.
  7. Repeat for a second time. Make sure to flatten the mascarpone mixture.
  8. Set in the fridge for at least 4 hours or overnight. Save the remaining cranberry sauce for topping later
  9. Add the left over cranberry sauce on top. Add some orange slices for topping.
  10. Cut and serve!

Pro-tip

  • Taste the cranberry sauce and adjust sugar in your mascarpone sauce to prevent the tiramisu from being overly sweet.
  • Make sure to whip the whipping cream to at least stiff peaks, it will really help to set the tiramisu since we are not using egg yolks in this recipe.
  • If you want to make it easier, you can mark and proportion the tiramisu before adding on the cranberry sauce on top
  • If you are using homemade mascarpone cheese, it will be slightly softer than using store bought.
