Cranberry Tiramisu

Equipment

  • 1 8 x 8 or 16 x 4 inch pan

Ingredients

  • 23-24 lady fingers
  • 1 ½ mascarpone 350g
  • ¼ cup sugar
  • can of cranberry sauce or 4 cups of cranberry sauce.
  • 1 ½ cup heavy/whipping cream 375ml
  • ¾ cup milk
  • Orange slices to decorate optional

Fresh cranberry sauce (Optional)

  • 340 g fresh or frozen cranberry 12 oz
  • 1 cup granulated sugar
  • 1 fresh orange juice

Instructions

Homemade cranberry sauce

  • Put in washed cranberry with sugar and juice of one orange into a pot
  • Turn the heat to medium and let it cook slowly
  • After 20 minutes, the cranberry should be soft and the juices should be reduced.
  • Transfer into a container and let it cool to room temperature and then into the fridge for at least 4 hours or best overnight

Cranberry Tiramisu

  • In a bowl whip the heavy/whipping cream on high speed until stiff peaks (5-7 minutes)
  • In a separate bowl, whip mascarpone and sugar together until smooth.
  • Add in the whipping cream and whip together until combined (don’t overmix). Set aside
  • Dip your lady fingers into milk and place into your dish
  • Add cranberry sauce onto the lady fingers and use a brush to spread it evenly.
  • Add in your mascarpone mixture on top, spread it evenly and make sure it’s flat.
  • Repeat for a second time. Make sure to flatten the mascarpone mixture.
  • Set in the fridge for at least 4 hours or overnight. Save the remaining cranberry sauce for topping later
  • Add the left over cranberry sauce on top. Add some orange slices for topping.
  • Cut and serve!
