The past week or so, my husband and I have been under the weather. We had a couple of weddings back to back and with the temperature dropping suddenly, I wasn’t prepared for it. So I got a cold and subsequently passed it onto my husband. With both of us sick we are very lazy and don’t want to cook. So I decided to make noodle soup for the two of us. It is light and mild, perfect when we don’t have an appetite. The warm soup is soothing and helps with our stuffy nose.

This recipe is actually borrowed from my mom. She would whip up this easy dish for me if I come home late from school and needed a quick meal. This is also my go to when I’m craving some late night food as well as my go to sick food (other than congee).

Ingredients for Noodle soup

There are only 3 main ingredients to make this noodle flavorful: soy sauce, sesame oil and green onions. That’s it! As for the stock, you can use chicken stock or just hot water. I love the combination of the soy sauce and sesame oil. I also love having a poached egg on top. It’s something I put on top of my noodle soups as it is one of my favourite protein topping for noodle soups.

How to make it

There isn’t much chopping or prep that goes into this dish. You would first chop up green onions and put it into a bowl. Add soy sauce and sesame oil into a bowl with a pinch of salt.

The noodles are boiled and placed in the bowl. Add hot water or any stock you like. Poach an egg and place it on top! Now if you like to add any other protein or veggies, you can fry up some spam and boil some Bok choy and place it on top of the noodles.

Pro Tip

  • When poaching the egg, crack the egg near the pot and use a ladle to gently move the water in a large circle avoid touching the egg, this will help to keep the egg’s shape!
  • If you are feeling really lazy, you can boil the noodles and egg together and just use the noodle stock as soup. However if you like a cleaner stock, then use heated up stock or boiled water, all the flavour comes from the soy sauce and sesame oil in the bowl.

Easy Noodle Soup

Ingredients
  

  • 1-2 Green onions chopped
  • 3 tbsp soy sauce
  • 2 tsp sesame oil
  • Large handful of dried wheat noodles
  • 2 eggs
  • 2-3 Bok choy optional
  • A pinch of salt

Instructions
 

  • Wash and cut the green onions. Put it into a bowl.
  • Put in 1½ tbsp soy sauce, 1 tsp sesame oil in each bowl and a pinch of salt.
  • Bring a pot of water to boil and meanwhile you can heat another pot with stock or boil water in a kettle
  • Once the water boils, boil your noodles. If it starts to boil over, pour some cold water into the pot.
  • Boil the noodles to your desired taste. For me it took about 5-6 minutes. Place the noodles directly into the bowl

  • Add a bit of the noodle water into bowl to prevent the noodles from sticking and mix the sauce with the noodles. Add the stock you prepared or boiled water to top up.
  • Use the remaining noodle water to poach the egg. Simply crack the egg into the pot and use a ladle to gently swirl the water in large circles to help keep the eggs in shape. Don't touch the egg.
  • Cook the egg to until it hold together but the yolk is still slightly runny. 1-2 minutes should be plenty. Take the egg out and in bowl.
  • This is purely optional, you can dump the water out of the pot and reboil some water to blanch some veggies, like bok choy, if not, you can serve the noodles as it is!
