Easy Noodle Soup

A quick and easy Noodle soup for lazy or sick days!

Ingredients

  • 1-2 Green onions chopped
  • 3 tbsp soy sauce
  • 2 tsp sesame oil
  • Large handful of dried wheat noodles
  • 2 eggs
  • 2-3 Bok choy optional
  • A pinch of salt

Instructions

  • Wash and cut the green onions. Put it into a bowl.
  • Put in 1½ tbsp soy sauce, 1 tsp sesame oil in each bowl and a pinch of salt.
  • Bring a pot of water to boil and meanwhile you can heat another pot with stock or boil water in a kettle
  • Once the water boils, boil your noodles. If it starts to boil over, pour some cold water into the pot.
  • Boil the noodles to your desired taste. For me it took about 5-6 minutes. Place the noodles directly into the bowl

  • Add a bit of the noodle water into bowl to prevent the noodles from sticking and mix the sauce with the noodles. Add the stock you prepared or boiled water to top up.
  • Use the remaining noodle water to poach the egg. Simply crack the egg into the pot and use a ladle to gently swirl the water in large circles to help keep the eggs in shape. Don't touch the egg.
  • Cook the egg to until it hold together but the yolk is still slightly runny. 1-2 minutes should be plenty. Take the egg out and in bowl.
  • This is purely optional, you can dump the water out of the pot and reboil some water to blanch some veggies, like bok choy, if not, you can serve the noodles as it is!
