Apple Stewed Pork Chops- done in 30 minutes

If there is anything I want during fall and winter time is something warm and saucy. Since fall hasn’t fully ended( it’s snowing here but it’s not winter soltice yet), I thought it would be great to make something that is representative of fall. That is cooking with apple! While apple can be used in a variety of desserts, it’s also great to cook savoury dishes as well. Recently I’ve been loving this apple stewed pork chops! It’s also simple to make!

We know fruits and meat form great combo….ahem turkey and cranberry anyone? Apple and pork together is also match made in heaven. The slight sweetness of apples complement the slight fattiness of the pork chops. Apples also help to cut down on the greasiness of pork.

Why stew pork chops?

Pork chops was something that I had a lot when I was young. My mom used to make pork chops as a quick meal. She usually pan fry the pork chops and finish it off in the oven. This recipe doesn’t require the oven and it can be done in less than 30 minutes. The reason that we are stewing the pork chops to help blend the flavours of the apple and pork chops. As we stew, the apple releases its flavour and also stewing will help to tenderize the pork chops. I also used soy sauce to add some umami to the dish.

Ingredients

  • 1 apple cored and sliced
  • 2-3 pork loin chops (ideally with a bit of fat in between).
  • 1 medium size onion
  • 2-3 large garlic cloves or 4-5 small garlic cloves

Pork Chop marinade

  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1/2 tbsp Vegetable oil

Sauce:

  • 2 tbsp soy sauce
  • 1 tbsp apple vinegar or rice vinegar
  • 1 tsp dark soy sauce
  • 1/2 tbsp brown sugar
  • 1 1/2 tbsp water
  • 1 tbsp brandy (optional)

How to make it

  1. Use the back of the knife to tenderize the pork chop. You can also use a meat tenderizer
  2. Marinate with salt pepper and a bit of oil, set aside for 10 minutes
  3. Remove the core of the apple and cut into thinner slices. Set aside
  4. Slice the onions and set aside
  5. Peel and cut off the ends of the garlic, set aside.
  6. Combine soy sauce, dark soy sauce and vinegar together.
  7. In a pan, heat up with some oil on medium-high heat
  8. Pan fry the pork chops until both sides are golden brown, about 2-3 minutes each sides
  9. Take the pork chops out and add in garlic and onion. Fry for 1-2 minutes.
  10. Add in the apple, cook for about 1 minute, add the pork chops back in.
  11. Add in the sauce with some brown sugar. Then add in brandy.
  12. Cover and let it simmer for about 10-12 minutes.
  13. Once the sauce has reduced down, the apples is soft, it;s ready. Serve with rice or your favourite vegetable.

Pro-tip

  • Make sure to sear both sides of the pork chops, you don’t need to finish cooking the inside.
  • Simmer on medium low heat to prevent overcooking and drying out the pork chop.
