I have another recipe to use the red bean paste. This one is pretty well known dessert from Japan called Dorayaki. It’s basically red bean paste sandwiched between two pancakes. If you know Japanese manga series Doraemon then you know dorayaki is Doraemon’s favourite food!
What is Dorayaki?
The modern dorayaki originate from Ueno district of Tokyo in 1914. However this confectionery has been around for many many years. The name has two parts to it; dora meaning Gong and yaki meaning grilled. These pancakes are fluffier and slightly more sweet than the American pancake you would have at breakfast. The name Dorayaki came from the pancake’s round golden brown resembling a gong.
Anyways, this recipe is very simple to make. This is probably one of the easiest dessert recipe I have made so far. It doesn’t take too much effort. As you already know I do have a problem with being patience and for me the biggest challenge is perfecting the heat to cook the dorayaki so you can get an even colour. Other than that, it doesn’t require too many ingredients or techniques.
Pro Tip
- Sift the cake flour so that you get no lumps
- Let it rest in fridge for 15 minutes
- use medium heat to heat it up and turn it to low. Keep it on low, it may take more time to cook but you get a more even colour
- If storing it in refrigerator, you can heat it up in microwave for about 10-20s to warm the pancake up.
- Also you can put any filling you like, the most traditional way is with red bean paste.
Dorayaki
Ingredients
- 3 large eggs
- 110 g milk
- 25 g honey
- 35 g granulated sugar
- 165 g cake flour
- 5 g baking powder
- Red Bean Paste
Instructions
- Beat eggs, sugar, milk and honey in bowl
- Sift the flour and baking powder into the bowl and mix
- Mix until all the dry ingredients are incorporated and no lumps are present.
- Seal the bowl and refrigerate for 15 minutes
- Heat a non stick frying pan on medium heat. Once it's hot, turn it to low
- Use a small ladle and ladle batter into the pan. Let the batter spread naturally, don't move the pan around
- Flip the cake once you see bubbles forming on the top. It takes about 1-2 minute. The side should be a golden brown colour
- Flip the pancake and wait about 30s and take it out of the pan.
- Repeat until all the batter is gone
- Take a small amount of red bean paste and put it on one side of the pancake
- Put another pancake on top to seal off the red bean paste. Press the edges gently and you are done! Enjoy~
