Dorayaki

Ingredients

  • 3 large eggs
  • 110 g milk
  • 25 g honey
  • 35 g granulated sugar
  • 165 g cake flour
  • 5 g baking powder
  • Red Bean Paste

Instructions

  • Beat eggs, sugar, milk and honey in bowl
  • Sift the flour and baking powder into the bowl and mix
  • Mix until all the dry ingredients are incorporated and no lumps are present.

  • Seal the bowl and refrigerate for 15 minutes
  • Heat a non stick frying pan on medium heat. Once it's hot, turn it to low
  • Use a small ladle and ladle batter into the pan. Let the batter spread naturally, don't move the pan around

  • Flip the cake once you see bubbles forming on the top. It takes about 1-2 minute. The side should be a golden brown colour

  • Flip the pancake and wait about 30s and take it out of the pan.

  • Repeat until all the batter is gone
  • Take a small amount of red bean paste and put it on one side of the pancake

  • Put another pancake on top to seal off the red bean paste. Press the edges gently and you are done! Enjoy~
