Minced pork rice
Iโve recently been loving a lot of mixed rice because itโs such an easy dinner for me. I donโt need to make multiple dishes and usually done in one pot. This minced pork rice is especially easy because it doesnโt require a lot of ingredients and so simple to make!

I love making this recipe when I have very few ingredients at home. I like how versatile this minced pork rice is and I can also add any veggies I want into this recipe. I usually prefers to add a bit of Bok Choy or other leafy veggies (steamed or boiled). The sauce makes any veggies taste good!
Inspiration for this minced pork rice
This minced pork rice was inspired by Taiwanese braised pork rice. If you never had Taiwanese braised pork rice, you should definitely give it a try! It’s made with cut up pork belly stewed in this delicious savoury soy sauce. The rice soaks up the delicious sauce and makes the rice so tasty! This minced pork rice is very similar to Taiwanese braised pork rice but instead of stewing the pork belly, I’m using ground pork which means it cooks a lot faster, perfect when you are short on time!

- 1 1/2 lbs ground pork (lean or regular)
- 1 1/2 tbsp freshly ground ginger

- 1 1/2 tsp dark soy sauce
- 1 tsp oyster sauce
- 1 tsp sugar
- 1 tsp of vinegar (apple cider or rice vinegar)
- 1/4 cup of water

- 1/2 tsp corn starch
- 1/2 tbsp water

How to make Minced Pork rice
- Marinate the ground pork with freshly minced ginger and salt for 10 minutes
- Make the sauce by combining soy sauce, dark soy sauce, oyster sauce, sugar, vinegar and water. Set aside
- In a hot pan, add 1 tbsp of oil. cook the minced pork the oils starts to come out of the pork (8-10 minutes)
- Crack the egg onto the pork. Once the edges of the egg starts to solidify, add in your sauce. Cover for 3 minutes
- Pour over rice and add some steamed veggies and you are done!

Pro-tip
- If you are using regular ground pork, reduce the amount of oil the ground pork will have a fat that will render out.
- When frying the ground pork, keep the heat at a medium or else the ground pork will clump up and the excess moisture wonโt render out.
- Make sure that the egg white is slightly solidified before adding the sauce. Or else the sauce would be rendered down too much during cooking.
- If you like it more saucy, can skip the cornstarch slurry.
