Minced Pork Rice

Ingredients

  • 1 ½ lbs ground pork lean or regular
  • 1 ½ tbsp freshly ground ginger
  • 1 ½ tsp salt
  • 4 eggs

Sauce

  • 3 tbsp soy sauce
  • 1 ½ tsp dark soy sauce
  • 1 tsp oyster sauce
  • 1 tsp sugar
  • 1 tsp vinegar apple cider or rice vinegar
  • ¼ cup water

Optional

  • ½ tsp corn starch
  • ½ tbsp water

Instructions

  • Marinate the ground pork with freshly minced ginger and salt for 10 minutes
  • Make the sauce by combining soy sauce, dark soy sauce, oyster sauce, sugar, vinegar and water. Set aside
  • In a hot pan, add 1 tbsp of oil. cook the minced pork the oils starts to come out of the pork (8-10 minutes)
  • Crack the egg onto the pork. Once the edges of the egg starts to solidify, add in your sauce. Cover for 3 minutes
  • Pour over rice and add some steamed veggies and you are done!
