Marinate the ground pork with freshly minced ginger and salt for 10 minutes
Make the sauce by combining soy sauce, dark soy sauce, oyster sauce, sugar, vinegar and water. Set aside
In a hot pan, add 1 tbsp of oil. cook the minced pork the oils starts to come out of the pork (8-10 minutes)
Crack the egg onto the pork. Once the edges of the egg starts to solidify, add in your sauce. Cover for 3 minutes
Pour over rice and add some steamed veggies and you are done!
