Pork rib soup is simple to make and only requires 3 ingredients. If you are new to cooking, this soup is a great dish to try.
This soup was actually derived from one of my husband’s friend recipe. He would always make this pork rib soup when we went camping. The recipe is simple so we don’t need to bring a lot of extra for this one dish and it doesn’t require a lot of seasoning. It does require a bit of time. You can cut down the cooking time by cooking in the instant pot or pressure cooker. We would always have this soup in the morning during camping. Nothing beats having this soup in the morning when it’s a bit chilly outside.
Ingredients
There are only 3 ingredients in this soup! That’s it! Believe me, it doesn’t get any simpler than this. It includes pork riblet , carrots and sweet corn on the cob. The seasoning? Just salt and pepper. There are no fancy tricks to this, just boil all of them together and season with salt and pepper. All the flavour comes from natural flavour of the ingredients. Pork center rib has a lot of meat meat and are cut smaller so it’s easier to cook. They come from the Pig’s center chest and are cut in half. Pork centre ribs can be bought from Asian grocery store.
Food to pair with pork rib soup
You can keep this simple and just eat it with rice. However, if you like to mix it up, I suggest adding some udon noodles or knife cut noodles to this with some cabbage or bok choy to make it into a noodle soup. Otherwise you can keep it simple with some rice and some stir fried veggies on the side.
Pro-tip
- Pre boil the rib to get rid of any of the scum. Alternatively you can soak the pork ribs in water overnight to draw out any blood. This will make the soup taste better.
- If boiling, add a tbsp of doenjang, it makes the pork ribs taste much better as it gets rid of the unpleasant flavour of the pork ribs.
- Cut the carrots and corn into similar sizes and not too small as it will disintegrate in the soup.
- Add about 1 1/2 tsp of salt first, after cooking, taste it again and salt to your liking.
- Make sure not to put more water than the max line or else it won’t pressurize to cook.
Pork Rib soup (instant pot)
Equipment
- 6 quart Instant pot
Ingredients
- 2 lbs pork center rib
- 3 sweet corn
- 2 large carrots
- 1 tbsp Deonjang Korean fermented bean paste
- 1 scallion cut into chunks
- Few slices of ginger
- 2 tsp salt
- pepper
Instructions
- Wash, peel and cut the carrots into thick slices
- Wash and cut the corn into thick slices
- Cut the pork ribs into small pieces.
- Pour some water into a pot and add in the pork ribs, scallions, ginger, deojang. Dissolve the deonjang in the water. Boil on high
- Once the water starts to boil, boil the pork ribs for 5-10 minutes
- Discard water, ginger and scallion and wash pork ribs with warm water
- Place the pork ribs into instant pot with carrots and corn. Add salt
- Fill to the max line (mine is a 6 quart instant pot) with water.
- Set the instant pot on high pressure for 25 minutes (on either soup/broth or pressure cook mode).
- Vent the instant pot (be careful not to burn yourself)
- Open the lid, let it cool a bite. Taste the soup, salt and pepper as needed. You can serve it as it s. Or you can boil some noodles and veggies and serve with the soup.
