Equipment

  • 6 quart Instant pot

Ingredients

  • 2 lbs pork center rib
  • 3 sweet corn
  • 2 large carrots
  • 1 tbsp Deonjang Korean fermented bean paste
  • 1 scallion cut into chunks
  • Few slices of ginger
  • 2 tsp salt
  • pepper

Instructions

  • Wash, peel and cut the carrots into thick slices
  • Wash and cut the corn into thick slices

  • Cut the pork ribs into small pieces.

  • Pour some water into a pot and add in the pork ribs, scallions, ginger, deojang. Dissolve the deonjang in the water. Boil on high

  • Once the water starts to boil, boil the pork ribs for 5-10 minutes
  • Discard water, ginger and scallion and wash pork ribs with warm water
  • Place the pork ribs into instant pot with carrots and corn. Add salt
  • Fill to the max line (mine is a 6 quart instant pot) with water.
  • Set the instant pot on high pressure for 25 minutes (on either soup/broth or pressure cook mode).
  • Vent the instant pot (be careful not to burn yourself)

  • Open the lid, let it cool a bite. Taste the soup, salt and pepper as needed. You can serve it as it s. Or you can boil some noodles and veggies and serve with the soup.
