Stewed Italian Sausage

There many days during the week where I’m tired and all I want to do is to lie on the couch and order from Skip or Ubereats. Having takeouts all the time is not that friendly to my health or wallet so when I do have tiring days, I usually fall back to a few dishes. This stewed Italian sausages is one my go to meals. It’s a great one pot meal which means less dishes, yes! Also I don’t need to do a lot of ingredients which is also a plus.

This stewed Italian sausage is one of my favourite meals that my mom cooked growing up. Now that I’m cooking for myself, I can see why my mom loved cooking this meal. I love how easy it is with the meal being ready under 30 minutes. I usually have it on top of some rice which is my favourite.

Ingredients for stewed Italian sausages

For this stewed Italian sausage, all you need is a can of diced tomatoes, onions, frozen vegetables and some Italian sausages. The type of Italian sausage is dependent on what you like. I like hot Italian sausage but you can do mild or honey garlic.

I like using canned diced tomatoes because of its ease of use and also I can season it in the can and pour into the pot. I also added some onions because I love cooked onions.

I also added some spices in the diced tomatoes. I added cayenne pepper, herb de Provence, thyme and salt. I also added some frozen veggies

How I made it

First I chopped up an onions. I just slice them thinly so they can cook easily. For the diced tomatoes, I just open the can, add in all the spices (cayenne pepper, herb de Provence, thyme, salt) and mix. You can put any spices you like. I also recommend adding some paprika as well.

I heat up a shallow dutch oven or saute pan, add some oil and start to pan fry the Italian sausage. Fry until it’s mostly golden brown and add in the onions.

Move the sausages to the top of the onions and let the onions cook for 5 minutes. Add in diced tomatoes and cover. Let it simmer for about 15 minutes.

After 15 minutes, add in the frozen veggies and let it simmer for another 5 minutes. Once the veggies are cooked through it’s ready to serve. I usually serve it with white rice but you can use brown rice or any carbohydrates of your choice.

Equipment

  • shallow Dutch oven/Saute pan

Ingredients

  • 1 can diced tomatoes
  • 1 medium onion
  • 5-6 Italian sausage (hot Italian sausage)

Seasoning

  • 2 tsp salt
  • ½ tsp thyme
  • ½ tsp herb de Provence
  • 1 tsp cayenne pepper

Instructions

Prep

  • Open the diced tomatoes can, add in salt, thyme, herb de Provence, cayenne pepper. Mix
  • Slice the onion thinly.

Cooking the Italian sausage

  • Heat up a shallow dutch oven or saute pan. Add some oil.
  • Fry the Italian sausage on medium until there are mostly no pink areas.
  • Add in the onions and move the sausage on top of the onions
  • Once the onion is soft, add in the canned diced tomatoes
  • Let it come to a boil and turn the heat down.
  • Cover and let it simmer for about 15 minutes
  • Once the sausage is cooked through, add in some frozen veggies, cover and let it simmer for about 5 minutes.
  • Serve with rice.
