Ways to use leftover dumpling wrappers

I don’t know about you, I have trouble making the exact amount of filling for the amount of dumpling wrappers I have. My filling is either too little or too much (that means I need to buy more wrappers). Hence, I always have leftover dumpling wrappers. When I have these leftover wrappers, it just disappears into the depth of my fridge until one day I discover it and it’s already mouldy. I’m producing so much food waste by not reusing leftover wrappers. Now I’m more cognizant about food waste and I’m making an effort to reduce food waste. Besides, dumpling wrappers are so versatile that it would be a shame for me not to use it in other ways.
What can you make with leftover dumpling wrappers?
Dumpling wrappers are usually made with water and flour, then rolled out very thinly. I’m going to show you how you can use leftover dumpling wrappers and cook it in 3 different ways. If you have leftover wonton wrappers, then you can do the same. This time I’m using it by frying them in the air fryer to make some flavoured chips. I’m also using it to make some scallion pancakes since I don’t need to make a dough for it. Lastly I’m going to use the leftover dumpling wrappers to make some sujebi (Korean hand torned noodle soup).
Ingredients:
Air fryer chips
- 1 pack dumpling wrappers
- 1-2 tsp paprika powder
- 1-2 tsp garlic powder
- 1/2 tsp salt
If going with sweet
- 1 tsp of sugar
- 1/2 tsp cinnamon powder
Scallion pancakes
- 1 pack of dumpling wrappers
- Water
- 1/3 cup chopped scallions
- 1/2 tsp salt
- Pinch of pepper
Makes about 3-4 pancakes depending on how many dumpling wrappers you layer to each pancake.
Sujebi soup
- 1/2 pack Dumpling wrappers
- 3 cup chicken stock or any stock of choice. If you don’t have don’t have any stock, add 1.5 tbsp chicken powder
- Veggies: carrots, zucchini
- 5-6 Minced garlic
- 2 scallions chopped
- 2 tbsp Soy sauce
- 1 1/2 tsp fish sauce for some umami
Makes about 2 servings.
Instructions
Air fryer chips:
- Cut wrappers into fourths. Separate the dumpling wrappers.
- Spray some oil on the bottom of the air fryer
- Place the dumpling wrappers evenly in the air fryer. If you are putting multiple layers, spray oil in between the layers and place more dumpling wrappers.
- Spray some oil and set the temperature to 180oC or 356oF for 10 minutes, shake half way in between.
- Once the chips are cooked, transfer into a bowl, spray water/oil on top. Air fryer makes the chips very dry.
- Add in salt, ground garlic, and paprika. Shake to mix.
- Once all the chips have coated with seasoning, serve!





Scallion pancakes
- Chop up scallions, place into a bowl, add salt and pepper.
- Take a dumpling wrapper and brush on some water
- Add some scallions to the middle.
- Then another dumpling wrapper.
- Press down the sides to avoid scallions from coming out.
- Roll out the dumpling wrappers to be about 3-4 in in diameter
- Repeat for 4-5 more times. This will help to create the flaky layers in a scallion pancake.
- Don’t worry if you can see some of the scallions peeking through the dumpling wrappers
- Roll it as thin as you can.
- Place on parchment paper for easy freezing or storage
- To make the scallion pancake, heat up a pan and add some oil. Place the scallion pancake in pan, cook until both sides are golden brown. (2 minutes)






Sujebi (Korean Hand Pulled noodles)
- Wash and cut zucchini and carrots into matchsticks. Also cut some scallions into 1-2 inch pieces. Mince some garlic.
- In a pot, add in stock and set it heat on medium high.
- As the stock starts to form small bubbles, add in carrots, zucchini, scallions and minced garlic. Once it boils turn the heat down and let it boil for 4-5 minutes
- Separate and cut the dumpling wrappers in half.
- Then place these dumpling wrappers into a bowl with some cold water for about 2 minutes.
- Then add in soy sauce, fish sauce. Let it simmer for 1 minute
- Take the dumpling wrappers out and stretch them slightly.
- Then place the dumpling wrappers into the soup. Boil for 1 minute. Serve!







Pro-tips:
- For the air fryer chips, spray sufficient amount of oil onto the dumpling wrappers.
- Before adding any seasoning, spray some water or oil onto the chips as it is very dry from the air fryer and the seasoning won’t stick onto the chips
- For scallion pancakes, make sure to brush on some water on the wrappers before putting the scallions and another wrapper. The wrappers are nonstick so you need the water to stick it together.
- If you are rolling out the scallion pancakes and some of the scallion juices will come out, don’t worry, just make sure you press down on the sides to glue the dumpling wrappers together.
- For sujebi, don’t soak the dumpling wrappers for too long, it will start to stick together and can break apart. 1-2 minutes is more than enough for you to stretch the dough.
