Chop up scallions, place into a bowl, add salt and pepper.
Take a dumpling wrapper and brush on some water
Add some scallions to the middle.
Then another dumpling wrappers.
Press down the sides to avoid scallions from coming out.
Roll out the dumpling wrappers to be about 3-4 inches in diameter
Repeat for 3-4 more times. This will help to create the flaky layers in a scallion pancake.(Don't worry if you can see some of the scallions peaking through the dumpling wrappers)
Roll it as thin as you can.
Place onto a parchment paper and stack it for easy freezing.
To make the scallion pancake, heat up a pan and add some oil. Place the scallion pancake in pan, cook until both sides are golden brown. (2 minutes)
