Wintermelon Pork Meatball soup

Ingredients

  • 1 lbs cut wintermelon
  • 1 lbs ground pork

Ground pork marinade

  • 2 tbsp ginger minced
  • 2 tbsp chopped scallion
  • 2 tbsp soy sauce
  • 1 tsp dark soy sauce. optional
  • 1 tsp oyster sauce
  • ¼ tsp salt
  • 1 tsp neutral oil

soup base

  • 6 cups water/chicken stock
  • 1 tsp chicken powder optional
  • scallions greens optional

Instructions

  • Remove the wintermelon peel and remove the seeds. Cut the wintermelon into ½-¼ inch thick and about 1½ inch wide
  • Cut scallions and mince up some ginger.
  • Put scallion and ginger into the ground pork. Add in soy sauce, dark soy sauce, oyster sauce, oil and salt into the pork
  • Mix the pork until all the ingredients are evenly distributed.
  • In a pot, put chicken stock or water with a bit of chicken powder
  • Bring the water or chicken stock up to a boil
  • Use a spoon to scoop up the ground pork like you would scoop for ice cream.
  • Drop them into the pot and boil. Repeat until all of the ground pork is done. Once the soup is boiling, take off some of the foam floating on top.
  • Add in the wintermelon to cook on medium until tender, it should be about 10-15 minutes. At this point the meatballs should also be cooked
  • Have a taste and add salt as needed. Top with scallions.

Notes

The soup flavour is mild and most of the taste comes from the pork and wintermelon. It's a great soup to have in the winter time.
