Instructions
Remove the wintermelon peel and remove the seeds. Cut the wintermelon into ½-¼ inch thick and about 1½ inch wide
Cut scallions and mince up some ginger.
Put scallion and ginger into the ground pork. Add in soy sauce, dark soy sauce, oyster sauce, oil and salt into the pork
Mix the pork until all the ingredients are evenly distributed.
In a pot, put chicken stock or water with a bit of chicken powder
Bring the water or chicken stock up to a boil
Use a spoon to scoop up the ground pork like you would scoop for ice cream.
Drop them into the pot and boil. Repeat until all of the ground pork is done. Once the soup is boiling, take off some of the foam floating on top.
Add in the wintermelon to cook on medium until tender, it should be about 10-15 minutes. At this point the meatballs should also be cooked
Have a taste and add salt as needed. Top with scallions.
Notes
The soup flavour is mild and most of the taste comes from the pork and wintermelon. It's a great soup to have in the winter time.
